  • Cornstarch for dusting

Instructions:

  1. In a large bowl, mix the sweet rice flour, sugar, and matcha powder.
  2. Gradually add water and stir until you achieve a smooth batter.
  3. Transfer the mixture to a microwave-safe dish and cover it with plastic wrap.
  4. Microwave for 2-3 minutes, stirring halfway through. The mixture should become sticky and form a dough-like texture.
  5. Dust your work surface with cornstarch, then transfer the mochi dough and let it cool for a few minutes.
  6. Divide the dough into small portions and shape them into balls. Coat them with more cornstarch to prevent sticking.

2. Matcha Latte Pudding

This creamy dessert combines the rich flavor of matcha with silky pudding for a delightful treat.

Ingredients:

  • 500 ml milk
  • 2 tablespoons matcha powder
  • 1/4 cup sugar
  • 3 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions:

  1. In a bowl, mix the matcha powder and sugar with a few tablespoons of milk to create a smooth paste.

Ingredients:

  • 4 large eggs
  • 1/2 cup sugar
  • 1/4 cup milk
  • 1/4 cup vegetable oil
  • 1 cup cake flour

  • 1 cup whipped cream
  • 1 tablespoon powdered sugar (for whipped cream)

Instructions:

  1. Preheat the oven to 350°F (175°C) and line a jelly roll pan with parchment paper.
  2. In a mixing bowl, whisk the eggs and sugar until light and fluffy.
  3. Slowly add the milk and vegetable oil, mixing well.
  4. Sift in the cake flour and matcha powder, folding gently until just combined.
  5. Pour the batter into the prepared pan and smooth the top. Bake for about 15-20 minutes, or until lightly golden.
  6. Let the cake cool for a few minutes, then invert it onto a clean kitchen towel dusted with powdered sugar.
  7. Spread the whipped cream evenly over the cake and roll it up tightly from one end.
  8. Wrap in plastic wrap and refrigerate for at least an hour before slicing.
