1. Mochi

Mochi is a sticky, chewy rice cake that can be enjoyed on its own or filled with a variety of sweet fillings like red bean paste or ice cream.

Ingredients:

  • 1 cup sweet rice flour (mochi flour)
  • 1/4 cup sugar
  • 1 cup water
  • Cornstarch (for dusting)

Instructions:

  1. In a microwave-safe bowl, mix sweet rice flour, sugar, and water until smooth.
  2. Cover with plastic wrap and microwave for 1 minute. Stir, cover, and microwave for another minute. Repeat this for a total of 3 minutes.
  3. Dust a flat surface with cornstarch. Once the mochi is cool enough to handle, transfer it to the dusted surface and knead slightly.
  4. Roll out the mochi and cut it into small pieces. Place a spoonful of your chosen filling in the center of each piece and fold the mochi over to seal.
  5. Coat the outside with cornstarch to prevent sticking. Enjoy!

2. Dorayaki

Dorayaki are fluffy pancakes filled with sweet red bean paste. They are a popular snack enjoyed by kids and adults alike.

Ingredients:

  • 2 large eggs
  • 1/2 cup sugar
  • 1 tablespoon honey
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder

Instructions:

  2. Sift in the flour and baking powder, mixing until smooth.
  3. Heat a non-stick skillet over medium heat. Pour a small amount of batter into the skillet, forming a pancake.

  5. Repeat until all batter is used, then let the pancakes cool slightly.
  6. Spread red bean paste between two pancakes to form a sandwich. Enjoy your dorayaki warm or at room temperature!

3. Matcha Green Tea Ice Cream

The earthy flavor of matcha makes this ice cream a delicious treat that reflects the traditional Japanese tea culture.

Ingredients:

  • 1 cup heavy cream
  • 1 cup milk
  • 3/4 cup sugar
  • 2 tablespoons matcha powder
