  • 2 1/2 cups water
  • 1/4 cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • Nori sheets (seaweed)
  • Fresh vegetables (cucumbers, carrots, avocado, bell peppers, etc.)
  • Pickled ginger (for serving)
  • Wasabi (optional, for serving)
  • Soy sauce (for dipping)

Step 1: Prepare the Sushi Rice

Start by rinsing the sushi rice under cold water until the water runs clear. This removes excess starch and helps achieve the perfect texture. After rinsing, combine the rice and water in a pot and let it soak for about 30 minutes.

Then, bring the rice to a boil over medium heat. Once boiling, reduce the heat to low, cover, and cook for 18-20 minutes. After cooking, remove the pot from heat and let it sit covered for an additional 10 minutes.

In a small bowl, mix together rice vinegar, sugar, and salt until dissolved. Once the rice is ready, transfer it to a large bowl, pour the vinegar mixture over it, and gently fold the rice with a wooden spoon or rice paddle. Allow it to cool to room temperature.

Step 2: Prepare the Vegetables

While the rice is cooling, prepare your vegetables. Wash and slice cucumbers, carrots, bell peppers, and avocado into thin strips. You can also try other fillings like mushrooms, sweet potato, or even pickled vegetables for an added punch of flavor.

Step 3: Assemble the Sushi

Once your sushi rice is cool and your vegetables are prepared, it’s time to assemble the sushi. Place a bamboo sushi mat on a flat surface and lay a sheet of nori shiny side down onto the mat.

With wet hands, spread a thin, even layer of sushi rice over the nori, leaving about an inch of space at the top to seal the roll later. Ensure the rice covers the nori completely but isn’t piled too thick. The key to good sushi is balancing the ingredients.

Place a line of your chosen vegetables in the middle of the rice. Be creative and mix different colors and textures to enhance not only flavor but also presentation.

Step 4: Roll the Sushi

To roll the sushi, lift the edge of the bamboo mat closest to you and carefully fold it over the filling, tucking it tightly. Continue to roll away from you, applying gentle pressure to keep the roll tight. Once you reach the exposed edge of the nori, wet it with a little water to help it seal.

After rolling, let the sushi sit seam-side down for a minute to help it maintain its shape.

Step 5: Slice and Serve

Using a sharp knife, slice the sushi roll into bite-sized pieces. Dipping the knife in water between cuts can prevent sticking and help you achieve cleaner edges.
