Instructions

1. Start by preparing the noodles according to the package instructions. Once cooked, drain and set aside. If using soba noodles, rinse them briefly under cold water to prevent them from sticking.

2. In a large pot, heat the sesame oil over medium heat. Add the sliced shiitake mushrooms and sauté for about 3-4 minutes until they begin to brown and release their juices.

3. Add the julienned carrots and cook for an additional 2-3 minutes until they start to soften.
Mix in the grated ginger and stir for another minute to release its flavors.

4. Pour in the vegetable broth and bring the mixture to a gentle simmer.
Stir in the soy sauce and miso paste (if using) until dissolved.

5. Add the cubed tofu and chopped bok choy, cooking for about 5 minutes until the bok choy wilts and the tofu is heated through.

7. Once the soup is ready, add in the cooked noodles and gently stir to combine everything without breaking the noodles.
