Instructions

Step 1: Prepare the Rice

Using day-old rice is ideal for fried rice recipes as it dries out slightly, preventing the dish from becoming mushy. If you don't have leftover rice, cook your rice and spread it out on a baking sheet to cool before using.

Step 2: Stir-Fry the Vegetables

In a large skillet or wok, heat the vegetable oil over medium-high heat. Once hot, add the diced carrots and stir-fry for about 2-3 minutes until they start to soften. Next, add the green peas and diced bell pepper, cooking for another 2 minutes until the vegetables are vibrant and tender.

This is also the time to add the optional egg if you are including it. Push the rice to one side of the skillet, scramble the egg on the other side, and then mix it in.
