How to Make Japanese Vegetable-Based Tofu Stew

  • 1 cup bok choy, chopped

Instructions

Step 1: Prepare the Tofu

Begin by pressing the firm tofu to remove excess moisture. Wrap it in a clean kitchen towel and place a heavy object on top for about 15-20 minutes. Once the tofu has been pressed, cut it into bite-sized cubes.

Step 2: Sauté the Vegetables

In a large pot or Dutch oven, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant. Then, add the daikon radish, carrot, and shiitake mushrooms to the pot. Cook for about 5-7 minutes, stirring occasionally, until the vegetables are slightly tender.

Step 3: Add Liquid Ingredients

Pour in the vegetable broth, soy sauce, and miso paste. Stir well to combine all the flavors and dissolve the miso paste completely. Bring the mixture to a boil.

Step 4: Add Tofu and Bok Choy

Once the broth is boiling, gently add the cubed tofu and chopped bok choy. Reduce the heat to a simmer and cook for an additional 10-15 minutes. This allows the tofu to absorb the flavors of the stew.

Step 5: Season and Serve

After simmering, taste the stew and adjust the seasoning with salt and pepper as desired. Once satisfied, remove the stew from heat and let it sit for a few minutes.

To serve, ladle the stew into bowls and garnish with chopped green onions. You can enjoy this dish with a side of steamed rice or on its own for a wholesome meal.
