How to Make Japanese Tofu Soup

Japanese tofu soup, also known as "tofu miso soup" or "dofu no shiru," is a nutritious and comforting dish that is simple to prepare. Rich in flavor and packed with essential nutrients, it makes for a perfect starter or a light meal. In this article, we will guide you through the steps to make authentic Japanese tofu soup at home.

Ingredients

To prepare Japanese tofu soup, you will need the following ingredients:

  • 1 block of firm tofu
  • 4 cups dashi stock (you can use instant dashi powder for convenience)
  • 2-3 tablespoons miso paste (adjust based on taste)
  • 1 cup of wakame seaweed (dried and rehydrated)
  • 2 green onions (thinly sliced)
  • Optional: mushrooms (shiitake or enoki), vegetables (spinach or bok choy)

Instructions

Step 1: Prepare the Ingredients

Begin by cutting the tofu into small cubes. If you are using mushrooms or additional vegetables, slice or chop them as desired. Soak the dried wakame seaweed in water for about 10 minutes, then drain and set aside.

Step 2: Make the Dashi Stock

If you are making dashi from scratch, combine water and kombu (dried kelp) and bring it to a simmer. Remove the kombu just before it boils. Add bonito flakes and let it steep. After a few minutes, strain the stock to get a clear liquid. If you are using instant dashi, simply mix the dashi powder with water as per the package instructions.

Step 3: Simmer the Soup

In a pot, bring the dashi stock to a gentle boil over medium heat. Add the cubed tofu and any optional mushrooms or vegetables you want to include. Let everything simmer for about 3-5 minutes until the vegetables are cooked through.

Step 4: Add Miso Paste

Turn down the heat and take a small ladle of the hot soup broth in a separate bowl. Add the miso paste to this bowl and stir until it’s well dissolved. This step prevents the miso from clumping in the soup. Carefully add the dissolved miso back into the pot while gently stirring the soup.

Step 5: Final Touches

Add the rehydrated wakame and sliced green onions to the soup. Allow it to heat through for another minute but avoid boiling it after adding the miso, as this can affect the flavor.

Step 6: Serve and Enjoy

Once the soup is ready, ladle it into bowls and serve hot. Japanese tofu soup is best enjoyed with a side of steamed rice or as part of a larger meal. You can customize the seasoning and ingredients according to your preference, making it a versatile dish for any occasion.
