How to Make Japanese Soup with Tofu and Vegetables

Japanese cuisine is known for its delicate flavors and wholesome ingredients. One popular dish that embodies these qualities is a comforting Japanese soup made with tofu and vegetables. This soup is not only nutritious but also easy to prepare. Below is a simple recipe that guides you through the process of making this delicious soup.

Ingredients

  • 2 cups vegetable broth
  • 1 cup water
  • 200 grams soft or silken tofu, cut into cubes
  • 1 cup of mixed vegetables (such as spinach, carrots, and mushrooms)
  • 2 tablespoons soy sauce
  • 1 teaspoon miso paste (optional)
  • 1 clove garlic, minced
  • 1-inch piece of ginger, grated
  • Green onions, chopped for garnish
  • Sesame oil for drizzling

Instructions

1. Prepare the Broth:

In a medium-sized pot, combine the vegetable broth and water. Bring the mixture to a gentle boil over medium heat.

2. Add Aromatics:

Once the broth is boiling, add the minced garlic and grated ginger. Allow the flavors to infuse for about 2-3 minutes, stirring occasionally.

3. Incorporate Vegetables:

Add the mixed vegetables to the pot. If you're using harder vegetables like carrots, make sure to cut them thinly so they cook evenly. Let them simmer for 5-7 minutes until they are tender.

4. Add Tofu:

Gently stir in the cubed tofu. If using miso paste, dissolve it in a small amount of warm water before adding it to the soup to prevent clumping. Incorporate the soy sauce, adjusting the amount to taste. Simmer for an additional 3-5 minutes, allowing the tofu to warm through.

5. Season and Serve:

Once the tofu is heated, remove the pot from the heat. Taste the soup and adjust the seasoning if necessary. Serve hot, garnished with chopped green onions and a drizzle of sesame oil for added flavor.
