How to Make Japanese Seafood Soup with Tofu

Japanese seafood soup, known as "kaisen chowder" or "kaisen miso soup," is a delicious and nutritious dish that combines the wonderful flavors of seafood with the subtle creaminess of tofu. This comforting recipe is perfect for any occasion and is easy to make at home. Follow these simple steps to create a delightful Japanese seafood soup with tofu.

Ingredients

  • 4 cups dashi broth (can substitute with vegetable broth)
  • 1 cup mixed seafood (shrimp, scallops, clams, or any seafood of your choice)
  • 1 block of firm tofu, cut into cubes
  • 1 cup sliced shiitake mushrooms
  • 2 green onions, chopped
  • 1 tablespoon miso paste (more to taste)
  • 1 tablespoon soy sauce
  • 2 teaspoons sesame oil
  • Fresh cilantro or seaweed for garnish (optional)

Instructions

1. Prepare the Broth

Begin by heating the dashi broth in a medium-sized pot over medium heat. If you are using vegetable broth, make sure to enrich it with a little bit of seaweed or kombu for an authentic taste.

2. Add the Seafood

Once the broth is hot, add the mixed seafood and sliced shiitake mushrooms. Let them simmer for about 5-7 minutes or until the seafood is cooked through and tender.

3. Incorporate Tofu

Gently add the cubed tofu into the pot. Be careful when mixing as tofu can break easily. Allow the soup to simmer for another 3-5 minutes to let the flavors meld together.

4. Season the Soup

In a small bowl, mix the miso paste and soy sauce together to create a smooth mixture. Once combined, gradually add this mixture to the soup while stirring gently. Taste the soup and adjust the seasoning with additional miso or soy sauce as needed.

5. Finish with Green Onions and Sesame Oil

Just before serving, drizzle the sesame oil into the soup and stir in the chopped green onions. This will add a lovely fragrance and flavor to the dish.

6. Serve and Garnish

Remove the soup from heat and ladle it into bowls. If desired, garnish with fresh cilantro or seaweed for an extra touch of flavor and presentation.

Tips for Perfecting Your Japanese Seafood Soup

  • Feel free to experiment with different types of seafood according to your preference.
  • For a spicier kick, consider adding a dash of chili oil or red pepper flakes.
  • Pair the soup with steamed rice or Japanese noodles for a filling meal.

Enjoy your homemade Japanese seafood soup with tofu, a delightful dish that brings the taste of Japan right to your kitchen!
