Instructions

Step 1: Prepare the Dashi Broth

If you’re making dashi from scratch, combine water with katsuobushi (bonito flakes) and kombu (dried kelp) in a pot. Let it simmer gently, then strain the liquid to obtain a clear broth. For a quicker option, dissolve instant dashi powder in water as per package instructions.

Step 2: Soak the Seaweed

Place the dried wakame seaweed in a bowl of warm water for about 10 minutes. This will rehydrate the seaweed, making it soft and tender. After soaking, drain and chop it into smaller pieces if needed.

Step 3: Combine and Simmer

In a saucepan, bring the prepared dashi broth to a gentle simmer. Add the soy sauce and mirin, stirring well to combine. If you want extra depth, you can add sliced mushrooms or other vegetables at this stage.

Step 4: Add Tofu and Seaweed

Carefully add the cubed silken tofu and soaked wakame to the simmering broth. Allow it to heat through for about 5 minutes, ensuring the tofu warms without breaking apart.

Step 5: Season and Serve

Taste the soup and adjust with salt or extra soy sauce if necessary. Once seasoned to your liking, garnish with thinly sliced green onions before serving.
