How to Make a Simple Japanese Soup for Lunch

  • 1 cup of wakame seaweed (dried)
  • 2 green onions, finely chopped

Instructions

Step 1: Prepare the Dashi Stock

Start by preparing your dashi stock. If you are using instant dashi powder, dissolve about 1 teaspoon of powder in 4 cups of water in a pot. Bring it to a gentle simmer over medium heat. If you prefer to make it from scratch, you can use kombu (dried kelp) and bonito flakes. Simply soak the kombu in water for about 30 minutes, then heat. Remove the kombu just before boiling and add bonito flakes. Strain the mixture to get a clear dashi broth.

Step 2: Add Miso Paste

Once your dashi is simmering, reduce the heat and take a small amount of the broth in a bowl. Add the miso paste to this bowl and mix it until smooth. This step helps prevent lumps in your soup later. Gradually stir this mixture back into the pot of dashi, being careful not to boil it after adding the miso, as boiling can destroy its delicate flavor and probiotics.

Step 3: Incorporate Tofu and Wakame

Gently add the cubed tofu and dried wakame seaweed to the soup. If you’re using any additional vegetables, this is the time to add them as well. Cook for about 5 minutes until heated through and the wakame has rehydrated.

Step 4: Finish with Green Onions

Finally, sprinkle the finely chopped green onions on top before serving. This adds a fresh flavor and a vibrant color to your bowl.

Step 5: Serve and Enjoy

Pour the soup into bowls and enjoy your homemade miso soup. It can be served alongside rice or as part of a bento box for a more filling lunch.
