Ingredients Needed

  • 1 cup sushi rice
  • 1 ¼ cups water
  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 8-10 medium-sized cooked shrimp (peeled and deveined)
  • Nori (seaweed sheets)
  • Cucumber (julienned)
  • Avocado (sliced)
  • Wasabi and soy sauce for serving

Step-by-Step Instructions

1. Prepare the Sushi Rice

Start by rinsing the sushi rice under cold water until the water runs clear. This step removes excess starch and helps achieve the desired texture.

In a saucepan, combine the rinsed rice and 1 ¼ cups of water. Bring it to a boil over medium heat. Once boiling, reduce the heat to low, cover, and let simmer for about 20 minutes. After the cooking time, remove the pan from heat and let it sit covered for an additional 10 minutes.

In a small bowl, mix together the rice vinegar, sugar, and salt until dissolved. Once the rice has rested, transfer it to a large bowl and gently fold in the vinegar mixture. Allow the rice to cool to room temperature.

2. Prepare the Ingredients

While the rice is cooling, prepare the fillings for your sushi rolls. Slice the cucumber and avocado into thin strips. If you haven’t already, ensure your shrimp are peeled, deveined, and cooked. Raw shrimp are not traditionally used, so make sure they are fully cooked for safety and flavor.

3. Assemble the Sushi Rolls

Lay a sheet of nori on a bamboo sushi mat or a clean surface, shiny side down. With wet hands (to prevent sticking), take a handful of sushi rice and spread it evenly over the nori, leaving about one inch at the top edge. Gently press the rice down to secure it without flattening it too much.

Next, lay 2-3 shrimp, along with a few cucumber and avocado strips, in a horizontal line about 2 inches from the bottom of the rice-covered nori.

4. Roll the Sushi

Starting from the bottom, begin to roll the sushi away from you, using the bamboo mat to help guide and shape it. Roll it tightly but not so much that the fillings squeeze out. Once rolled, use a sharp knife to slice the roll into bite-sized pieces. It helps to wet the knife between cuts to achieve clean slices.

5. Serve and Enjoy

Arrange the sushi rolls on a plate. Serve with soy sauce and wasabi on the side for dipping. Feel free to garnish with pickled ginger or sesame seeds if desired.
