After soaking, slowly heat the pot over medium heat. Just before the water starts to boil, remove the kombu. It is important not to let the kombu boil, as this can create a bitter taste.

Step 3: Add the Fish

Now, add the fish fillets to the pot. Allow the fish to simmer gently for 5-8 minutes until cooked through. Use a slotted spoon to remove the fish and set it aside.

Step 4: Create the Broth

Add the dried bonito flakes to the pot and let it simmer for about 5 minutes. This will enrich the broth with a deep umami flavor. After simmering, strain the broth through a fine sieve to remove the bonito flakes, leaving you with a clear, flavorful soup.

Step 5: Season and Serve

Add salt to taste to your broth. You can also return the cooked fish back to the pot if you prefer. To serve, ladle the soup into bowls and garnish with chopped green onions or additional seaweed. Serve hot and enjoy!
