In a pot, bring the dashi to a gentle simmer. Add the fresh fish to the pot, allowing it to poach for about 5-7 minutes until fully cooked. Once done, remove the fish and set it aside to cool. After it cools down, flake the fish into bite-sized pieces, discard any bones, and keep it ready for the soup.

Step 3: Make the Soup Base

In the same pot with the dashi, introduce the rinsed rice and let it simmer for approximately 15-20 minutes until the rice is tender. Stir occasionally to prevent sticking. If you're using miso paste, dissolve it in a small bowl with a bit of hot broth, then stir it back into the pot.

Step 4: Combine Ingredients

Once the rice is cooked, add the flaked fish back into the pot along with the chopped green onions and soy sauce. Stir the mixture gently to combine all the ingredients and allow it to heat through for another 2-3 minutes. Taste the soup and adjust the seasoning with salt if necessary.

Step 5: Serve and Garnish
