How to Make a Traditional Japanese Potato Salad

Japanese potato salad, known as "potato sarada," is a delightful twist on the classic Western version. It combines creamy potatoes with various ingredients, creating an irresistible combination of flavors and textures. This traditional dish is often served as a side at Japanese barbecues, parties, and family gatherings. Here's a straightforward guide on how to make a traditional Japanese potato salad.

Ingredients

  • 4 medium-sized potatoes
  • 1/2 cup of Japanese mayonnaise (such as Kewpie)
  • 1/4 cup of finely chopped cucumber
  • 1/4 cup of finely chopped carrots
  • 1/4 cup of diced ham or cooked chicken (optional)
  • 1 tablespoon of rice vinegar
  • Salt and black pepper to taste
  • Chopped green onions for garnish (optional)

Instructions

Step 1: Prepare the Potatoes

Begin by washing and peeling the potatoes. Cut them into quarters and place them in a pot of cold water. Add a pinch of salt and bring the water to a boil. Cook the potatoes for about 15-20 minutes or until they are fork-tender. Drain the potatoes and let them cool slightly.

Step 2: Mash the Potatoes

Once the potatoes have cooled, transfer them to a mixing bowl. Use a fork or a masher to gently mash the potatoes. It's important to leave some chunks for texture, so don't overdo it! Allow the mashed potatoes to reach room temperature.

Step 3: Prepare Other Ingredients

While the potatoes are cooling, wash and finely chop the cucumber and carrot. If you are using ham or chicken, dice them into small pieces. This step adds flavor and color to your potato salad.

Step 4: Mix It All Together

Once the potatoes are at room temperature, add the chopped cucumber, carrots, and meat (if using) to the bowl. In a separate small bowl, mix the Japanese mayonnaise and rice vinegar. Pour the mayo mixture over the potato mixture, and gently fold everything together until well combined. Season with salt and black pepper to taste.

Step 5: Chill and Serve

For the best flavor, refrigerate the potato salad for at least 30 minutes before serving. This allows the flavors to meld beautifully. When ready to serve, garnish with chopped green onions if desired.

Tips for the Perfect Japanese Potato Salad

  • For extra creaminess, you can add a bit of heavy cream or yogurt to the mayonnaise mix.
  • Experiment with additional ingredients like peas or boiled eggs to customize your salad.
  • Always opt for Japanese mayonnaise, as its unique flavor is a key element in this dish.

Enjoy this traditional Japanese potato salad as a side dish at your next meal, or savor it on its own. Its creamy texture and vibrant flavors will be a hit with anyone who tries it!
